The Fool’s Croque Madame
Which came first: the Fool or the egg? You can look at the shape
of an egg, hold it in your hand, and he reminded of the Fool’s
number— zero. Just as the Fool represents pure potential, so do
eggs with their infinite varieties of preparation. The egg is
considered by many to be a perfect food. Let this idea of perfection remind you that the Fool is safe, no matter what path he follows. Like a newborn, the Fool begins his journey perfect from the offset.
The trick to this French bistro classic is slow-cooking the grilled
ham and cheese. A low f ame ensures the sandwich is warm and
gooey on the inside and crunchy on the outside.
i tablespoon mayonnaise
i teaspoon grainy Dijon mustard
1 tablespoon butter
2 slices thick white sandwich bread
V2 cup shredded Gruyere cheese
4 thin slices Black Forest ham
1 farm-fresh egg*
Sea salt and freshly ground pepper to taste
Mix the mayonnaise and mustard together.
Melt butter over low flame in a nonstick pan.
As butter melts, assemble sandwich. Spread half the
mavo/mustard mixture over one slice of bread. Sprinkle half
the cheese over mayo/mustard mix and top with ham.
Spread the remaining mayo/mustard over the second slice
of bread and sprinkle remaining cheese on top. Press together, cheese sides facing each other, to form sandwich.
Place sandwich in pan with foaming butter.
Cook on very low flame, flipping over to ensure even cooking and pressing down with spatula to flatten. When sandwich is golden brown and toasty, after 5 or 10 minutes, remove from pan and place on plate.
Increase heat to medium flame and immediately crack egg
into the same pan. Fry the egg, covered, until the whites are
set and the yokes are still runny, about 3 minutes. Slide the
egg on top of the toasted sandwich and top with a sprinkling
of sea salt and freshly ground pepper.
Makes 1 sandwich.
* If salmonella is a cause of concern for you. cook eggs until
yolks are set or use pasteurized eggs (in the shell).

The Magician’s Parmesan Herbed Risotto
Risotto is a labor of love. It requires about twenty minutes of
continuous stirring. A Magician uses this time wisely. Write
spells, words, and shapes in the risotto as you stir this heavenly
Tuscan treat. Act like a proper Magician and you'll know the
risotto is finished when it is al dente, like pasta—tender to the
tooth. Be sure to use Arborio rice, which is found in any supermarket in the pasta aisle.
5 cups chicken broth
2 tablespoons unsalted butter
i tablespoon extra virgin olive oil
i clove garlic, minced
1/3 cup shallots, minced
1V2 cups Arborio rice
V2 cup dry white wine
1 tablespoon butter
Va cup grated Parmigiano-Reggiano cheese
1 tablespoon chopped fresh parsley or fresh mixed herbs
Salt and cracked pepper to taste
Bring the broth to a steady simmer in saucepan.
In a heavy 4-quart pan, heat the butter and olive oil over
moderate heat. Add the garlic and shallots. Saute for 1 to 2
minutes until it begins to soften, being careful not to brown
it. Add the rice; using a wooden spoon, stir for 1 minute. Be
sure all the grains are well coated. Add white wine and stir
until completely absorbed. Begin to add the simmering
chicken broth, a half a cup at a time, using a soup ladle and
stirring frequently. Wait until each addition is almost completely absorbed before adding the next V2 cup, reserving about 1/4 cup to add at the end. Stir frequently to prevent
sticking.
When the rice is tender but firm, add the reserved broth.
Turn off the heat and immediately add the butter, cheese,
and herbs. Stir vigorously to combine with rice. Serve immediately; top with more fresh cheese, tons of fresh cracked pepper, and a sprinkling of sea salt.
Once mastering the art of risotto, you can prepare it with
an endless number of flavors and additions. Adjust for the
season; pumpkin and morel risotto in the fall, hearty beef
and mushroom risotto in the winter, sugar snap pea risotto
in the spring, risotto primavera for summer.
Note to vegetarians; the chicken stock in above recipe may
be replaced with vegetable stock. The white wine may also
be omitted.

V2 seedless cucumber, peeled and thinly sliced (about 32
slices)
V2 cup cream cheese, room temperature
V2 cup watercress leaves, washed and chopped
16 slices thin white bread
