  6 T. heavy cream (or 6 T. evaporated milk)

  ¼ tsp. nutmeg

  6 drops tabasco sauce (or hot sauce of your choice)

  Preheat oven to 350º

  Grease 9” pie pan.

  Beat 1 egg, add cooked rice and Swiss cheese. Stir well.

  Spread mixture evenly in greased pan, making a crust. Refrigerate until ready to fill and bake.

  Cook kudzu leaves in small amount of water until tender. Press to remove moisture and chop fine. Add butter and set aside.

  Beat 3 remaining eggs. Stir in salt, cottage cheese, Parmesan, cream, hot sauce and nutmeg. Stir in kudzu. Pour into rice crust.

  Bake 30-35 minutes or until firm.

  Fried Dandelion Blossoms

  Pick a bowlful of blossoms in full bloom.

  Soak blossoms in salt water to kill any insects that might be hiding among the petals.

  Pat blossoms dry with a paper towel.

  Dip blossoms in mixture of 1 beaten egg and a ½ cup of milk. Then dip in *fry coating. Fry until golden brown. Drain on paper towels.

  *Fry Coating

  2 c. all purpose flour

  2 tsp. onion powder OR garlic powder. (I use garlic powder)

  2 tsp. salt

  1 tsp. dried thyme, crushed

  1 tsp. ground black pepper

  Mix all ingredients together and store in tightly closed container in the fridge.

  BJ’s Chicken Salad

  3 c. chopped, roasted, boneless chicken breast

  1/3 c. chopped green onions

  1/4 c. chopped smoked almonds

  1/4 c. plain yogurt

  1/4 c. mayonnaise

  1 tsp. fresh rosemary, crushed

  1 tsp. Dijon mustard

  1/8 tsp. salt

  1/8 tsp. pepper

  Place all ingredients in a large bowl and stir together until well mixed. Refrigerate an hour before serving.
